国産小麦粉１００％を使用し多加水（約６０％）にて熟成に熟成を重ね、職人が４日間かけて造りました。熟成時間は延べ４３時間以上。職人こだわりの「匠の熟成」により小麦粉の粒子がゆっくりと時間をかけて負荷なく結合し、手綯いされた生地は手延べ製法により細く延ばされ一昼夜かけて乾燥される。匠の熟成製法の麺は乾燥後には「薄琥珀色」となり、輝くほどの艶となり滑らかな表面となります。
手綯い製法による麺線は一本一本が微妙に違い、多加水熟成による細さは茹で上げ後もほとんど膨れず変わることがなく、独特の舌ざわりとなり「コシが強く滑らかな喉ごし」が特徴の稲庭食感となります。
専門店や老舗料亭・割烹等のご飲食店でご使用いただいている「業務用」の部位の切り落としです。 長さや細さは多少不揃いですが、手造りの風味をご堪能いただけます。
