作業工程の手綯い作業は熟練の技が必要となります。糸を紡ぐかのように微妙な力加減で調整をしながら八の字に手綯いされます。手造りにこだわる為、一本一本に微妙な太さの違いが出てしまいます。作業最終工程の「選別」にて３分３０秒の茹であがるように規格内の寸法に揃えます。この時に規格外の太さになってしまう部分が「お徳用太麺」となります。
太麺とは言え「ゆで時間は４分３０秒」と短時間での調理となっております。
寒い季節には温かく、そしてコシが強いので「煮込みうどん」や「鍋の締め（一度茹でてから使用）」等に活躍します。
